Tomato Sandwiches

The blinds on my windows are open, and the sun is performing well.
Opie is fighting a bully on The Andy Griffith Show.
And I was in the mood for a Tomato Sandwich.

“Tomato Sandwiches,” I believe, began in the South.

There are “rules” or “steps” to a proper Tomato Sandwich.

First, you need a good, ripe tomato.
Second, two pieces of good soft bread.
The third is mayonnaise —The proper mayonnaise.
“Dukes” is what most people use.
I like “Bama” mayonnaise, but I’ve been told that Bama and Dukes are one and the same. That’s a story for another day. I had to go sit under a tree on the day I accidentally found out that Dukes and Bama are one and the same. It took the wind out of me.
Yes, we take our Mayonnaise seriously in the South.
Next is Salt and Pepper.

Cut up three or four thick slices of tomato to go on your bread. Set aside.

You’re going to put mayonnaise on both slices of your bread. Yep. And putting the right amount of mayonnaise on your bread is important.
It’s like painting a wall.
A wall usually needs two coats of paint or more, and so does your bread. Apply two coats of mayonnaise to each slice of bread.

Salt and Pepper each slice of bread to your liking. I like a lot of Pepper.
Next, add three or four slices of tomato to one slice of bread.
Again, salt and Pepper the tomato to your liking. As before, I like a lot of Pepper.
Put the other slice of bread on top, and Et Voila!

Now, if you know me, you know I love cheese. I do.
It doesn’t belong on a tomato sandwich, though.
Some people sneak cheese onto their tomato sandwiches. They then go into the closet and hide while they eat their sandwich—As they should. Cheese does not belong on a tomato sandwich.

If you find yourself eating a tomato sandwich at a friend’s house and they have put cheese on their sandwich, pick up your trading cards and go home. Don’t play with them anymore.

After making my tomato sandwich, I sat in my recliner with my sandwich and watched The Andy Griffith Show.
Lunch was good today.
