Spinach and Kale

I’ve always liked Spinach. Always.
I’ve always liked Kale too. Always.
So does me, mom, and Niece Number One.

So, one of us had the idea of cooking them together just as you would cook Spinach but add some fresh Kale to the mix.
I tried it.

Now, before I go any further, I need to say that although we all liked it, I like it with just Spinach by itself better.
Also, before I go any further, please note that I am still a “Beginner” at cooking.
Now:

I added some Extra Virgin Olive Oil to a good-sized pan. A good-sized pan is needed. You’ll understand why when you see the pictures. A lid for the pan is also a big help.

I added two tsp. Of Minced Garlic and browned it to a nutty color. (I read that doing this brings a rich, aromatic flavor to any recipe) —I did the best I could—
Then I added two chopped-up Onions and Stir-Fried it all together.

Next, I added a bag of Fresh Spinach from the Vegetable section of “The Pig.”
The Spinach cooks down. It also has water in the leaves, creating water in the pan. That’s fine.

Once the Spinach cooked down, I added a bag of Kale.
Kale also has water inside it and will create more water.

After it all cooked down, I added four beaten eggs and Scrambled them into the mix.

I did have to stir it a good bit. You know, Mix it up a bit.

And that was it.
We enjoyed it; it made enough for the whole family and some for tomorrow.
